This was one of the first pancake recipes years ago that we used on the Atkins Diet. If you have a Nutri Bullet or blender use that, it mixes the batter. The batter will be thin, but the pancakes are still very delicious. Now there are many more recipes using all sorts of ingredients, but this one is worth the try.
4 Ing Low-Carb Cream Cheese Pancakes
- 2 oz cream cheese room temp
- 2 eggs
- 1 teaspoon sugar substitute
- 1/2 teaspoon cinnamon
