    Classic Zucchini Bread

I prefer my zucchini in a sweet quick bread like this rather than as a side dish, imagine that! This recipe has an entire cup of oil in it, so just face it now and know that if your neighbor keeps giving you garden-grown zucchini you must, at some point, make this bread to give back. It’s just neighborly. Print Zucchini Bread Ingredients 3 eggs 2 cups white sugar 1 cup vegetable oil 1 tablespoon vanilla extract 2 cups grated zucchini 2 cups all-purpose flour 1 1/2 teaspoons ground cinnamon 1 teaspoon baking soda 1/4 teaspoon baking powder 1 teaspoon salt 1/2 cup chopped walnuts optional Instructions Preheat an oven…

    Buttermilk Biscuits

These are tender, flaky, and a combination of homemade biscuit recipes I’ve found. The technique is the secret-cutting in the cold butter with your fingers, not overworking the dough, being lovingly tender with them. Work fast so the butter won’t melt or get soft because the key to flaky biscuits are the shards of butter worked into the flour. When they are placed into a high-heat oven, the butter melts and forms the flaky layers. Print Tender and Flaky Buttermilk Biscuits Ingredients 2 1/2 c unbleached all-purpose flour plus additional flour for work surface 1 Tbsp baking powder 1/2 tsp baking soda 1 tsp salt 2 Tbsp vegetable shortening cut…

    Perfect Homemade Cornbread

I’ve tried ’em all, and this is by-far the best “regular” cornbread. I have other recipes with added cheese, jalapenos, etc. They’re wonderful and moist, but this recipe is the one you’ll want to make when a high, simple cornbread is needed. It’s tried and true. Print Perfect Homemade Cornbread Ingredients 1 1/2 cups cornmeal 2 1/2 cups milk 2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon salt 2/3 cup white sugar 2 eggs 1/2 cup vegetable oil Instructions Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan. In…

    Moist Sour Cream Banana Bread

I took my mom’s sour cream banana bread recipe and made just a couple of changes, but I am showing you the original recipe card in front of my memorable photo of her.  Instead of adding 1 c. white sugar, I added 1/2 c. white and 1/2 c. light brown sugar. I also added a little (1-2 t.) maple syrup to the batter-I love the addition of maple syrup to banana bread. Then I substituted unbleached flour for the all-purpose flour-it makes it just a little better texture-a little more dense. Print Mom's Moist Sour Cream Banana Bread Ingredients 1/2 cup butter, room temp 1/2 cup sugar 1/2 cup light…

    Cheesy Breadsticks

It’s all the rage in the “Low Carb World” – FAT HEAD. Originally Fat Head was a documentary directed and starring Tom Naughton that blew up the theory of nutrition and lipid hypothesis. Surprisingly, Naughton’s ending, as compared to the documentary Super Size Me, revealed his overall cholesterol had dropped from 222 to 209, his LDL dropped from 156 to 130, and his HDL (good stuff) increased from 49 to 64! But that’s another story altogether. The Holy Grail of low carb pizza dough, bread dough and any other kind of dough you could ever dream of is called Fat Head Dough. It’s wheat-free, grain-free and seriously amazing, if I…

    Jalapeno “Cornbread”

The thing I miss the most on my low carb way of eating is BREAD!!!!! I’m not positive exactly where I got this recipe, but I’m glad I found it. It’s become my favorite. It’s even good room temp as a snack. Seriously. I haven’t tried substituting pickled jalapenos, but I think the fresh ones have such a great flavor I’d use fresh. I’m already thinking about the fall and making some LC chili to spoon over one of these babies and top with cheese. Print Jalapeno “Cornbread” Servings 12 Ingredients 2 cups almond flour 2 cups shredded cheddar cheese 2 fresh jalapenos seeded and minced 1 1/2 teaspoons baking…
