    Keto Blueberry Crumble

I was hungry this morning, but nothing sounded good. I had some fresh blueberries (about 2 1/2 cups) that I needed to use, but muffins or hot cereal topped with them didn’t ring my chimes. Then I thought of making blueberry crumble for breakfast just because I could. I figured, fresh fruit, a little keto crumble and a splash of heavy whipping cream to add in my fat for the meal. Bravo! Keto Porridge

Porridge or hot cereal or cream of wheat or Malt-O-Meal, it really doesn’t matter what you call this hot breakfast cereal that is great on a low-carb, keto eating plan. It’s just plain GOOD! Seriously, the two things I miss about not eating many carbs is my cereal in the morning and the toast I would have with it. Carb on Carbs on Carbs. No wonder I ended up not being able to sleep on my tummy! SO….I went to work, did my research and made my own hot cereal (I’m still working on the toast). It reminds me of good, old fashioned Malt-O-Meal I used to eat when I…

    Steel Your Heart Away Eggrolls

The winner in Bob’s Red Mill Steel Cut Oats contest, landing me in Scotland with their marketing team representing BRM and the U.S., this original recipe of mine makes me proud. Like a child of mine. It also made it’s way into a Family Circle Cookbook-the recipe that just never stops giving! I think you’ll love the recipe because it’s not really hard to make, but according to the emcee in Carrbridge Scotland at The Golden Spurtle, it is “orgasmic.” Seriously-I have a video to prove it. My husband insists I need to set up a booth at the Texas State Fair and sell these. I’m content with just knowing…

    Moist Sour Cream Banana Bread

I took my mom’s sour cream banana bread recipe and made just a couple of changes, but I am showing you the original recipe card in front of my memorable photo of her.  Instead of adding 1 c. white sugar, I added 1/2 c. white and 1/2 c. light brown sugar. I also added a little (1-2 t.) maple syrup to the batter-I love the addition of maple syrup to banana bread. Then I substituted unbleached flour for the all-purpose flour-it makes it just a little better texture-a little more dense. Print Mom's Moist Sour Cream Banana Bread Ingredients 1/2 cup butter, room temp 1/2 cup sugar 1/2 cup light…

4 Ing. Low-Carb Cream Cheese Pancakes

This was one of the first pancake recipes years ago that we used on the Atkins Diet. If you have a Nutri Bullet or blender use that, it mixes the batter. The batter will be thin, but the pancakes are still very delicious. Now there are many more recipes using all sorts of ingredients, but this one is worth the try. Print 4 Ing Low-Carb Cream Cheese Pancakes Ingredients 2 oz cream cheese room temp 2 eggs 1 teaspoon sugar substitute 1/2 teaspoon cinnamon Instructions Mix all in blender and pour onto a heated and buttered griddle or skillet. When the top starts to bubble up, flip over. Double, Triple…

    “Light as a Feather” Scones

Made with low-fat vanilla yogurt, these flaky and light scones are perfect for snacking or for breakfast. Made from ingredients you probably have on hand, they are especially good with hot tea. “A scone is a British baked good, usually made of wheat, or oatmeal with baking powder as a leavening agent and baked on sheet pans. A scone is often lightly sweetened and occasionally glazed with egg wash. The scone is a basic component of the cream tea or Devonshire tea.”         Living many years in the Pacific Northwest, the scone influence is great, so they became one of our staples, and these are my favorite.…
