Longhorn Steakhouse Parmesan Crusted Chicken Copy Kat Recipe

I live in Texas, okay. That means that steakhouses are on every corner, and LongHorn Steakhouse is one of the best. You probably thought I’d be sharing a steak recipe, but actually it’s a chicken dish that is wonderful. It’s called Parmesan Crusted Chicken-grilled chicken topped with a creamy parmesan cream sauce. What’s not to love about that?! Click HERE to see the original “Copy Kat” version (including a video) that shows how to make it at home. That’s what I love about the Copy Kat site because I truly hate going out to eat-would rather make it at home, but there are a lot of great dishes I want…

    Salisbury Steak

This is a pretty straight-forward American recipe that most people have either had at Luby’s or at home made by their mom or grandma. I’m funny that way-love just plain, ole good American dishes like this. Mashed potatoes and peas and I’m one happy person. Print Salisbury Steak and Gravy Ingredients 1 can condensed French onion soup 1 1/2 pounds ground beef-93% lean 1/2 cup plain dry bread crumbs 1 egg 1/4 teaspoon salt 1/8 teaspoon pepper 1 tablespoon flour 1/4 cup ketchup yest that's right-ketchup 1/4 cup water 1 tablespoon Worcestershire sauce 1/2 teaspoon dry mustard Instructions In a large bowl, mix together 1/3 cup condensed French onion soup…

    Zita Taco Bake

Talk about an easy and quick kid-approved dinner! It tastes like taco because of the packet of taco seasoning, sort of like mac-n-cheese because of the pasta and cheese, and is so easy to make. I got the original recipe from Just A Pinch HERE. I renamed it and kept the recipe the same and know you will love it as much as I do. Print Ziti Taco Bake Ingredients 3/4 bag s ziti noodles, 1 lb of ground beef 1 pkg taco seasoning 1 c water 1/2 pkg cream cheese 1 1/2 c shredded cheese mexican mix Instructions Boil pasta until just cooked. Shortcut Honey-Lime Chicken Enchiladas

I love this easy recipe because it begins with a store-bought rotisserie chicken, but when you get through with it, the taste is remarkable, and it looks very pretty if you garnish it with just a few cherry or grape tomatoes and fresh cilantro or parsley, if you’d like. Sometimes, as in my photo, I add red bell peppers or green to the chicken mixture too. The honey and lime add that sweet/acidic balance that makes a dish extra good. I think you’ll love it like we do. Print Shortcut Honey Lime Chicken Enchiladas Ingredients 1 store-bought rotisserie chicken, taken off the bone and shredded with a fork 2 T…

    Tamale Workshop Recipes

I took a Tamale-Making class at our local Central Market with a few work friends. Our teacher was a Tamale EXPERT, Nettie Lopez. She and her family have been making, not only tamales, but beans, flan, guacamole and other authentic Mexican dishes for years and years-the recipes were passed down over the generations. How lucky were we to actually get her recipes, and I’m sharing them with you! (I apologize in advance for not putting the individual recipes on cards to print-working on that to have available in this post soon) Tamale Workshop Nettie Lopez, Central Market Cooking School Tamales Ingredients: 2 cups masa harina (corn flour) 2 cups reserved…

    Tex Mex Quesadilla Burger

I always like doing things the non-traditional way, and this is no exception. Made with a flour tortilla instead of a bun, this burger is so popular among my friends and one of the most requested cook-out burgers. Who knew? I created it when attempting to win the Saucy Mama contest. It just goes to show that, win or lose, it’s always a good thing to try. One of the best burgers came out of this contest entry. Of course, you can always substitute ingredients-instead of making the salsa, you can use prepared salsa. Instead of roasting poblano peppers yourself, buy the canned mild green chiles, and cook the burgers…

Easy One Skillet Chicken Alfredo LC/Keto

This is how most of my dinners go: Look in the fridge Look in the pantry Pick a protein Pick a veggie Start putting it together somehow, using what I have on hand It may not be the best way to prepare dinner, but it goes fast, USUALLY turns out edible, sometimes wonderful and solves the “what to eat for dinner” problem without reading a recipe. This was one of those dishes that I made last night-Chicken breasts. Cut into strips. hmmmm-Mexican, Italian, Southern? Then I spotted a spaghetti squash laying over there on the countertop. Wash, cut, scoop, season, bake. While that was cooking, I started by sauteing the…

    Bubble & Squeak

You know the sound of bubbling and squeaking? Well, this cabbage and potatoes cooking in a skillet makes THAT noise. Hence the name. “Bubble and squeak is a traditional British breakfast made from boiled potatoes and cabbage. In modern times it is a dish made with the shallow-fried leftover vegetables from a roast dinner. … The dish is so named because the cabbage makes bubbling andsqueaking sounds during the cooking process.” Somewhat the same, but this is my personal version because, well, it just tastes great! It’s also great as a side if you just cook the vegetables in some oil or in bacon grease if you want to add bacon to…

    Chicken Fried???

Born in Texas, relocated to Washington state, back to Texas, then off to the Pacific Northwest for a year, this gal knows the difference between Southern cooking and what I call “the norm.” You see, Southerners grown up on things like pimento cheese, chicken fried steak (an oxymoron if you ask me), cornbread and buttermilk (in a glass-together!), fried okra, hush puppies and tons of Tex Mex food. “The norm” grows up on salisbury steak with onions, spaghetti and meatballs, beef barley soup and not much, if any, Tex Mex food. So, when a Southerner cooks chicken fried steak, well….it’s not chicken at all. That would be chicken fried chicken.…

    Quick & Easy Chicken Stir-Fry

This is my easiest low-carb/keto recipe yet. It’s also very adaptable to what you have on hand. Last night I had some frozen broccoli, cauliflower, carrot in a steamer bag. I had a bag of frozen riced cauliflower that I got at Aldi for 1.79 a bag. I also had 3 chicken breasts, boneless and skinless. I steamed the veggies in the microwave, stir-fried the chicken, cut into small strips, then added the riced cauliflower and then the veggies. I added soy sauce and voila! Butter Beer Prawn with Cheesy Beer Grits

    It’s Pizza Night

Here ya go, one of the many pizza-making projects me and my Italian husband enjoy making together. This time, I used a new keto crust made with herbs and coconut flour, eggs and cheese-the new fathead dough for me. The sauce is always the same-Aldi Vodka Sauce because it has the fewest net carbs. The toppings, always Aldi-this time sausage, green pepper, kalamata olive, arthichoke and feta-stuffed huge green olives, sliced. topped with grated parm and mozzarella. First, let’s talk about the pizza dough. This one is nut-free, made with coconut flour. HERE is the link I used-Sugar-Free Mom’s recipe. The only change I made was to mix in my…

    Jalapeno Popper Chicken

Photo & Recipe Courtesy of Easy Family Recipes, found on Pinterest. I have made this recipe many times because I love the taste of the fresh jalapeno peppers, whether I chop them or cut them into strips like in the photo. Be sure and remove the seeds! I cut the chicken breasts in half lengthwise because I prefer thin cutlets. It also makes it go a long way. I only use 1 bonesless chicken breast cut in half for 2 servings. Schnitzel

A schnitzel is meat, usually thinned by pounding with a meat tenderizer, that is fried in some kind of oil or fat. The term is most commonly used to refer to meats coated with flour, beaten eggs and bread crumbs, and then fried. To me, there’s nothing like a thin, crispy pork schnitzel, and I’ve found a way to make a low carb version that is just as delicious as the ones I’ve made in traditional breadcrumbs. PORK RINDS! 0 carbs I use this hand little hand-pulled food chopper that I ordered from QVC.   What I did was chop them fine, almost making a “dust.” A dish of 3 eggs,…

    Fish Fry

When my husband came home with a cooler full of iced-down freshly-caught crappie, and we don’t eat many carbs, I knew I had to think quickly! Pork Rinds! I had seen it done, and even though he questioned it, I tried it anyway. Who wants to fall off the LC wagon for fish?! Beaten eggs, finely-processed pork rinds, salt & pepper and peanut oil. It was very unbelievable, crunchy, filling and a great experiment that we will use over and over again. I wanted tartar sauce, so I mixed together mayonnaise (full fat), dill pickle relish (a log of it!) and a bit of pepper. I also added a little…
