    Italian Sausage with Squash Noodles

It all started with a zucchini spiralizer that I ordered from, you guessed it, Amazon. Because if I can’t get it on Amazon, then I can live without it. Period. Below is my grandson giving it a workout. I chose one that was small, easy to clean and had great reviews. After my air fryer, no more huge appliances will be ordered for me! I cooked some Johnsonville Mild Italian Sausage links in a pan with olive oil, then I sliced them up and finished cooking them. In a separate pan I melted butter (I use Kerrygold), added some minced garlic and Italian seasoning. Threw those zoodles (I used yellow…

    Pizza Night

Remember when you used to just pick up the phone or go online and order that Friday night pizza? Well, this is just as good and so much better if you eat low carb/keto. A little more work, but if you have someone to help, it’s really fun to get in the kitchen together and make this. Really. Granted, not as easy as calling for delivery, but just wait….one day lowcarb pizza will be delivery. I believe. This is our supreme, although all our toppings are under the cheese. Quartered pepperoni, chopped bell pepper, mushrooms. Pretty much what we had in the pantry/fridge. The dough-classic fat head dough, pierced and…

    Sweet Pineapple Pulled Pork

I love pineapple in so many things I thought I’d try to add it to my slow cooker shredded pork. I experimented with the recipe, and this is what I came up with. It’s a little bit spicy with the red pepper flakes but not too much. Mild enough for kiddos, but you can always leave it out. I believe in seasoning as you go in layers, so even though not written into the recipe, you can always add a little more garlic or spices as you go along, including soy sauce. It came out perfect the first time, and the Hawaiian sweet buns were so good to serve this…

    Slow Cooker Pulled Pork

A brief history of North Carolina pulled–porkbarbecue. A brief history of North Carolina pulled–pork barbecue. … Both the name and method of cooking found their way to North America, where George Washington noted in his diary of 1769 that he “went up to Alexandria to a “barbicue.” Not counting the seasonings, there are only 3 amazing ingredients in this “off the cuff” recipe I made one day. Now it’s the only way I cook pulled pork. You can use any kind of beer or ale and any brand of barbecue sauce. I use Shiner Bock beer and Sweet Baby Ray’s regular barbecue sauce. Buttermilk Country Fried Steak

Chicken-fried steak is a dish in which a cut of beef, usually thin and selected from the round, is breaded and fried. (Occasionally, some restaurants have also cooked a cut of pork.) The method of preparation is similar to that of fried chicken, which explains the name. The Texas staple is most often served with mashed potatoes and covered with cream gravy. The correct preparation of Texas chicken-fried steak takes time. The meat is pounded thin or run through a tenderizer, then dipped in milk before being placed in a bag of salt, pepper, and flour. The meat is then fried until golden brown in a small amount of shortening…

    Fort Worth Fish Tacos

I know that fish tacos aren’t the first thing you think of when in Fort Worth. Usually it’s BBQ, beer and briskets. I cooked in Las Vegas and ranked 7th in the world in the Seafood division with the help of this original recipe. Alaskan Seafood sponsored me, and they gave me the freshest and most luscious fish to use-halibut. I know I could have used cod, but that was too “standard.” I also use crappie that my husband catches and fillets for me to cook. If you’re like my friend who fishes out of Florida, you could use any mild fish that was your catch of the day! Print…
