    Keto Blueberry Crumble

    I was hungry this morning, but nothing sounded good. I had some fresh blueberries (about 2 1/2 cups) that I needed to use, but muffins or hot cereal topped with them didn’t ring my chimes. Then I thought of making blueberry crumble for breakfast just because I could. I figured, fresh fruit, a little keto crumble and a splash of heavy whipping cream to add in my fat for the meal. Bravo!     Good Ole Fashioned Casserole-Keto Style

    This recipe takes me back to when I was 10. I don’t really know why, but I can imagine my mom making a casserole using a can of cream of something soup, ground beef and canned green beans. This recipe is so easy to make-no soup cans here. To make it keto, cream cheese, cheddar and mozzarella cheeses and whipping cream are used.     I’m not much on cauliflower, but for some reason I love it in this salad. Maybe because I cut the florets into tiny pieces, along with the other veggies. Feel free to add other veggies too like carrots, artichoke hearts, cucumber, etc. I love the combination of the bacon and the cheese with the creamy ranch dressing.
