    Cheesy Zucchini & Riced Cauliflower

Whether you’re one of the millions of those Keto or Low-Carb people or not, this side dish is really good. It goes well with chicken, beef, pork – anything! Not a fan of cauliflower, this doesn’t taste like it at all, which is a good thing if you’re me. I kind of think that riced cauliflower is sort of like tofu-it takes on the flavors of what it is mixed with, which is also good. Give it a try-you’ll be glad you did. Crock Pot Cornbread Dressing

Here’s the deal In the South we call it dressing, not stuffing. It’s baked outside the bird, not inside. It’s made with mostly cornbread and little stale bread or leftover biscuits. Everyone thinks theirs is the best. Mine is the best. This stays warm all day long, even for 2nds and leftovers that night with a roll and slice of turkey, along with a spoonful of cranberry sauce. It stays warm and moist all day because it stays covered in your slow cooker, or crock pot. It is just the best way. Trust me. Print Crock Pot Cornbread Dressing Ingredients 6 cups cornbread cooked (I use either an 8x8 or…

    Scalloped Squash

I can’t tell you where this recipe came from because it’s not a recipe at all. What I mean is that my mom used to, what she called, scallop dishes. Growing up, that meant adding eggs and crackers to stuff, that’s all I ever knew. This is somewhat like that. I had some squash a friend gave me who has a garden, and I had some carrots, and I wanted to “scallop” it. Sounds even weirder when you say it out loud. This is a recipe for that, in case you’re interested in scalloping too, and I don’t mean shellfish, even though I do love scallops. Gee, wonder what scalloped…

    Bubble & Squeak

You know the sound of bubbling and squeaking? Well, this cabbage and potatoes cooking in a skillet makes THAT noise. Hence the name. “Bubble and squeak is a traditional British breakfast made from boiled potatoes and cabbage. In modern times it is a dish made with the shallow-fried leftover vegetables from a roast dinner. … The dish is so named because the cabbage makes bubbling andsqueaking sounds during the cooking process.” Somewhat the same, but this is my personal version because, well, it just tastes great! It’s also great as a side if you just cook the vegetables in some oil or in bacon grease if you want to add bacon to…

    Baked Zucchini Noodles

A great technique to cook spiralized zucchini in the oven without it getting mushy, which is not a good thing. Susan, aka “Grandma” to Brandon shared it with us last night at dinner, and it’s waaaaay better than soggy zoodles! 250 degrees. Spiralize the zucchini into fine noodles. Place on dry paper towels, enough to cover the baking sheet. Sprinkle with sea salt and bake 30 minutes-it sweats out the moisture, and the noodles are similar to al dente pasta-voila! The Other Side

Not a fan. At all. Cauliflower is not my friend-that’s what makes low carb eating difficult for me. That and the hatred of eggs. No offense, Cauli Flower and Eh ggs. When I discovered potatoes dumped me too, and we had been in love for so many years, I had to reach out, join an online dating group and find someone new. That’s when I met this dish, and it’s as close as I can get to my true love without cheating on him. Authentic Mexican Old School Rice

Authentic Mexican Rice. I used a can of Rotel tomatoes with juice instead of the canned tomatoes and tomato paste. I love it that way because I don’t like a “saucy” rice. Once everything is boiling, cover and take off the heat and let it set for 20 min-that’s it! Make the rest of your meal while the rice is absorbing the wonderful flavors. Easy!
