    Cauliflower Broccoli Salad

I’m not much on cauliflower, but for some reason I love it in this salad. Maybe because I cut the florets into tiny pieces, along with the other veggies. Feel free to add other veggies too like carrots, artichoke hearts, cucumber, etc. I love the combination of the bacon and the cheese with the creamy ranch dressing. Hope you love it as much as we do.  Print Cauliflower Broccoli Salad Servings 8 Ingredients 1 medium head cauliflower cut into small florets 1 small head broccoli cut into small florets 1 small can sliced black olives drained 1 cup shredded cheddar cheese 1/2 cup shredded mozzarella cheese I've used pepperjack also…

    Cheesy Zucchini & Riced Cauliflower

Whether you’re one of the millions of those Keto or Low-Carb people or not, this side dish is really good. It goes well with chicken, beef, pork – anything! Not a fan of cauliflower, this doesn’t taste like it at all, which is a good thing if you’re me. I kind of think that riced cauliflower is sort of like tofu-it takes on the flavors of what it is mixed with, which is also good. Give it a try-you’ll be glad you did. Print Cheesy Zucchini & Riced Cauliflower Ingredients 2 Tbsp butter 2 Tbsp olive oil 1 bag s frozen riced cauliflower 1 large zucchini 1/2 tsp seasoned salt…

    Crock Pot Cornbread Dressing

Here’s the deal In the South we call it dressing, not stuffing. It’s baked outside the bird, not inside. It’s made with mostly cornbread and little stale bread or leftover biscuits. Everyone thinks theirs is the best. Mine is the best. This stays warm all day long, even for 2nds and leftovers that night with a roll and slice of turkey, along with a spoonful of cranberry sauce. It stays warm and moist all day because it stays covered in your slow cooker, or crock pot. It is just the best way. Trust me. Print Crock Pot Cornbread Dressing Ingredients 6 cups cornbread cooked (I use either an 8x8 or…

    Scalloped Squash

I can’t tell you where this recipe came from because it’s not a recipe at all. What I mean is that my mom used to, what she called, scallop dishes. Growing up, that meant adding eggs and crackers to stuff, that’s all I ever knew. This is somewhat like that. I had some squash a friend gave me who has a garden, and I had some carrots, and I wanted to “scallop” it. Sounds even weirder when you say it out loud. This is a recipe for that, in case you’re interested in scalloping too, and I don’t mean shellfish, even though I do love scallops. Gee, wonder what scalloped…

    Bubble & Squeak

You know the sound of bubbling and squeaking? Well, this cabbage and potatoes cooking in a skillet makes THAT noise. Hence the name. “Bubble and squeak is a traditional British breakfast made from boiled potatoes and cabbage. In modern times it is a dish made with the shallow-fried leftover vegetables from a roast dinner. … The dish is so named because the cabbage makes bubbling andsqueaking sounds during the cooking process.” Somewhat the same, but this is my personal version because, well, it just tastes great! It’s also great as a side if you just cook the vegetables in some oil or in bacon grease if you want to add bacon to…
