There are really only 2 things I’ve missed while living the low carb lifestyle – toast and cereal. Those were my 2 mainstays of breakfast and even sometimes dinner. I’ve been able to substitute everything else, even ice cream, but toast and cereal aren’t easy to re-create.
I buy Joseph’s Lavash bread-It’s Flax, Oat Bran & Whole Wheat Middle Eastern Bread, and the large sheets of it have only 6 net carbs. I use half, so 3 net carbs.
Here’s what I did-I sprayed a cookie sheet with buttery non-stick spray. Then I melted 2 Tablespoons butter. I sifted together 1 T. cinnamon and 2-3 T. Swerve granulated sugar substitute in a bowl. I brushed the melted butter on the top side of the bread, on the cookie sheet. I then sprinkled with cinn-sugar and cut them into appx. 1/2-inch squares with a pizza cutter and baked them in a 350 oven for about 5-6 minutes.
It was actually good! I had it with unsweetened vanilla almond milk. I think I just missed the “action” of eating cereal, if that makes any sense. It stayed crispy in the milk too.
