You know when you can’t help yourself from eating something wonderful before it’s done? Well, these are like that. Once I make this warm candy, I can’t even wait until I roll them into balls, then in coconut and I’ve got a mouthful of that warm, date/butter mixture. It’s almost too hot, right out from the pan, to put in my mouth but so worth it. You know what I mean.
My friend, Becky, loves for me to make them at Christmas. Unless she’s on a low-carb eating plan, then I just keep them for myself. I always make them though during the holidays because Christmas wouldn’t be Christmas without them.
Coconut Date Nut Balls
- 1 stick unsalted butter
- 2 large eggs beaten
- 1 cup sugar
- 1 cup chopped dates
- 1 cup chopped pecans
- 1 tsp. vanilla extract
- 3 cups rice krispies
Melt butter in skillet, add eggs, sugar and dates.
Cook over low heat until thickened, about 10 minutes.
Slowly mash dates while cooking.
Turn off heat.
Add pecans, vanilla and Rice Krispies.
While warm, roll and shape in small balls.
Roll in coconut.
Place on waxed paper.
Keep hands moist while rolling.
