This recipe is great to take with you or cook ahead so you can focus on your company. They’re also great for holidays. Made it your crockpot and creamy and wonderful-mix it up a little-add bacon, cheese, etc. Whatever you’d like-it’s just potatoes.
Crock Pot Potatoes
- 5 pounds red potatoes quartered, with skins on or off, your preference
- 1 clove minced garlic or a dash of garlic salt or powder
- 2 cubes chicken bouillon
- salt & pepper to taste
- 3/4 cup sour cream
- 8 ounces cream cheese softened
- 1/2 cup butter
Boil potatoes, garlic, and bouillon together for about 20 minutes, just until potatoes are tender but still a little firm.
Drain and place in a large bowl. Mash with salt and pepper, sour cream, cream cheese and butter. If too thick, add a little milk or cream to thin a little.
Transfer the potato mixture to your crock pot and cover.
Cook on low heat 2 to 3 hours. Right before serving, you can add bacon bits, more butter, paprika, shredded cheese, whatever you'd like. Feeds a crowd-enjoy!
