This is how most of my dinners go:
- Look in the fridge
- Look in the pantry
- Pick a protein
- Pick a veggie
- Start putting it together somehow, using what I have on hand
It may not be the best way to prepare dinner, but it goes fast, USUALLY turns out edible, sometimes wonderful and solves the “what to eat for dinner” problem without reading a recipe.
This was one of those dishes that I made last night-Chicken breasts. Cut into strips. hmmmm-Mexican, Italian, Southern? Then I spotted a spaghetti squash laying over there on the countertop. Wash, cut, scoop, season, bake.
While that was cooking, I started by sauteing the chicken, which I had cut into strips, garlic, seasonings, then removed to a plate. I didn’t want a red sauce to go over the spaghetti squash, not with chicken, so I made an alfredo sauce.
There’s only one problem. Definition of ALFREDO:

Well, THAT could be a problem. Never go to Urban Dictionary when it comes to food.
Then I found this: a sauce for pasta incorporating butter, cream, garlic, and Parmesan cheese. That’s better. What’s really strange, when I went to write the recipe down, was that every section of ingredients has exactly 5 ingredients. I like when that happens.

- 1 medium spaghetti squash
- 2 t olive oil
- 1/2 t salt
- 1/4 t pepper
- 1/2 t garlic powder or fresh minced garlic
