Easy One Skillet Chicken Alfredo LC/Keto

This is how most of my dinners go:

  1. Look in the fridge
  2. Look in the pantry
  3. Pick a protein
  4. Pick a veggie
  5. Start putting it together somehow, using what I have on hand

It may not be the best way to prepare dinner, but it goes fast, USUALLY turns out edible, sometimes wonderful and solves the “what to eat for dinner” problem without reading a recipe.

This was one of those dishes that I made last night-Chicken breasts. Cut into strips. hmmmm-Mexican, Italian, Southern? Then I spotted a spaghetti squash laying over there on the countertop. Wash, cut, scoop, season, bake.

While that was cooking, I started by sauteing the chicken, which I had cut into strips, garlic, seasonings, then removed to a plate. I didn’t want a red sauce to go over the spaghetti squash, not with chicken, so I made an alfredo sauce.

There’s only one problem. Definition of ALFREDO:

Extremely handsome, the kind of guy that would do anything for you. Has muscles on top of his muscles. He’s loyal and trust worthy, loves his family and his friends. Will put your needs above his. The kind of guy you want to take home to your parents. Someone who will succeed in life. Always supportive and caring. Someone all the girls want but is faithful to only one. protector. Never clingy.Someone you will always want in your life

Well, THAT could be a problem.  Never go to Urban Dictionary when it comes to food.

Then I found this: a sauce for pasta incorporating butter, cream, garlic, and Parmesan cheese. That’s better. What’s really strange, when I went to write the recipe down, was that every section of ingredients has exactly 5 ingredients. I like when that happens.

Easy One Skillet Chicken Alfredo LC/Keto


Spaghetti Squash

  • 1 medium spaghetti squash
  • 2 t olive oil
  • 1/2 t salt
  • 1/4 t pepper
  • 1/2 t garlic powder or fresh minced garlic


  • 3 T olive oil
  • 2 large chicken breasts, sliced into strips
  • 2 cloves garlic, minced
  • 1/2 t pepper
  • 1 t salt

Alfredo Sauce

  • 4 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese-grated
  • 1 t dried Italian seasoning
  • 1 t dried parsley or fresh-3 t


1. Preheat oven to 350 degrees.

2. Cut Spaghetti Squash in half lengthwise and scoop out seeds and membrane with a spoon and discard.

3. Drizzle olive oil over insides of squash and sprinkle with salt, pepper and garlic. Turn cut-side down on cookie sheet and bake 35-45 minutes, until outside is starting to get soft to the touch.

4. While squash is cooking, in a large skillet, drizzle olive oil, add chicken strips, salt, pepper and garlic. Cook over medium high heat until chicken is done.

5. Add cream cheese cubes to pan and stir until melted. Add heavy cream, turning heat to medium low, and then parmesan cheese. Add Italian seasoning and parsley and cook on low about 5 additional minutes.

6. Scoop out spaghetti squash onto 4 plates. Serve with chicken and sauce over top.
