It all started with a zucchini spiralizer that I ordered from, you guessed it, Amazon. Because if I can’t get it on Amazon, then I can live without it. Period. Below is my grandson giving it a workout. I chose one that was small, easy to clean and had great reviews. After my air fryer, no more huge appliances will be ordered for me!
I cooked some Johnsonville Mild Italian Sausage links in a pan with olive oil, then I sliced them up and finished cooking them.
In a separate pan I melted butter (I use Kerrygold), added some minced garlic and Italian seasoning. Threw those zoodles (I used yellow squash and also zucchini squash) in the butter and tossed around for a few minutes, maybe 3-4. Then I added the sliced cooked sausage, sprinkled with parmesan and Voila!
It’s enough to feed 4 or 2 very hungry people.
Italian Sweet Sausage with Zucchini Noodles
- 2 Tablespoons olive oil
- 1 package Johnsonville Mild Italian Sausage Links
- 2 zucchini spiralized
- 2 yellow squash spiralized
- 1/4 cup real salted butter I use Kerrygold
- 1 teaspoon minced garlic 1 clove if using fresh or 1/4 teaspoon garlic powder
- salt pepper to taste
- 1/4 cup grated parmesan cheese
In a skillet, heat olive oil on medium high heat, add sausage links and cook until almost done, turning down heat to prevent getting too brown. When done, slice into 1/2-inch slices and set aside.
In the same skillet or another skillet, melt butter with garlic and seasoning on medium high heat. Add squash "zoodles" and salt and pepper. Toss and cook 3-4 minutes. Turn off heat.
Add cooked sausage slices and toss. Sprinkle with parmesan.
