Guilt-Free Pancakes

There are some things that I always order from Amazon. 

To make a pancake feast and still stay within our carbs for the day, I’ve found that the best and easiest way to make fluffy pancakes and not feel guilty is to use ‘Carbquik’ baking mix. 

Compare the carb count of the old fashioned carb-filled ‘Bisquick” baking mix versus the low-carb version.

28 net g carbs in 1/3 c mix

2 net g carbs in 1/3 c mix

On the side of the box, it gives instructions to make about 6 large pancakes with 2 cups Carbquik, an egg, melted butter, 1/8 cup heavy cream and water.

BUT our version (thanks to my husband, who is the “official pancake maker” in our family, found the best way to make tender, fluffy pancakes that don’t fall apart.

He adds 2 cups Carbquick, 2 eggs, 1 t. vanilla extract and approximately 1 cup to 1 1/2 cups water, or just enough to make the batter the consistency of pancake batter.

He uses no melted butter, 2 eggs instead of 1, adds vanilla and omits the heavy cream all together.

Go ahead and slather on real butter, you’re worth it (plus 0 carbs)

Now, let’s talk about syrup. We all know it’s full of sugar, even the sugar-free you buy at the stores. We prefer 0-2 or 3 net carb syrup, also ordered from Amazon. Take a look.
