Longhorn Steakhouse Parmesan Crusted Chicken Copy Kat Recipe

I live in Texas, okay. That means that steakhouses are on every corner, and LongHorn Steakhouse is one of the best. You probably thought I’d be sharing a steak recipe, but actually it’s a chicken dish that is wonderful. It’s called Parmesan Crusted Chicken-grilled chicken topped with a creamy parmesan cream sauce. What’s not to love about that?! Click HERE to see the original “Copy Kat” version (including a video) that shows how to make it at home. That’s what I love about the Copy Kat site because I truly hate going out to eat-would rather make it at home, but there are a lot of great dishes I want…

    Shortcut Honey-Lime Chicken Enchiladas

I love this easy recipe because it begins with a store-bought rotisserie chicken, but when you get through with it, the taste is remarkable, and it looks very pretty if you garnish it with just a few cherry or grape tomatoes and fresh cilantro or parsley, if you’d like. Sometimes, as in my photo, I add red bell peppers or green to the chicken mixture too. The honey and lime add that sweet/acidic balance that makes a dish extra good. I think you’ll love it like we do. Print Shortcut Honey Lime Chicken Enchiladas Ingredients 1 store-bought rotisserie chicken, taken off the bone and shredded with a fork 2 T…

Easy One Skillet Chicken Alfredo LC/Keto

This is how most of my dinners go: Look in the fridge Look in the pantry Pick a protein Pick a veggie Start putting it together somehow, using what I have on hand It may not be the best way to prepare dinner, but it goes fast, USUALLY turns out edible, sometimes wonderful and solves the “what to eat for dinner” problem without reading a recipe. This was one of those dishes that I made last night-Chicken breasts. Cut into strips. hmmmm-Mexican, Italian, Southern? Then I spotted a spaghetti squash laying over there on the countertop. Wash, cut, scoop, season, bake. While that was cooking, I started by sauteing the…

    Quick & Easy Chicken Stir-Fry

This is my easiest low-carb/keto recipe yet. It’s also very adaptable to what you have on hand. Last night I had some frozen broccoli, cauliflower, carrot in a steamer bag. I had a bag of frozen riced cauliflower that I got at Aldi for 1.79 a bag. I also had 3 chicken breasts, boneless and skinless. I steamed the veggies in the microwave, stir-fried the chicken, cut into small strips, then added the riced cauliflower and then the veggies. I added soy sauce and voila! Print Quick & Easy Chicken Stir-Fry Used with frozen riced cauliflower for a low-carb/keto version Servings 6 Ingredients 3 tbsp olive oil plus 2 tbsp 1 1/2…

    Mississippi Chicken

It first started with a roast, then I took the recipe and used it for chicken breasts. So simple and lots of flavor. It does sound a little weird, but trust me, use all the ingredients, and you won’t be sorry.  Print Mississippi Chicken Servings 6 Ingredients 6 boneless skinless chicken breasts 1 teaspoon seasoned salt 1 teaspoon black pepper 1 packet au jus gravy mix 1 packet ranch dressing mix 1 stick 1/2 cup salted butter 6-8 whole peperoncini peppers Instructions Add chicken breasts to the bottom of a slow cooker. Sprinkle with seasonings and both packets of au jus gravy mix and ranch dressing. Slice butter on top…

    Jalapeno Popper Chicken

Photo & Recipe Courtesy of Easy Family Recipes, found on Pinterest. I have made this recipe many times because I love the taste of the fresh jalapeno peppers, whether I chop them or cut them into strips like in the photo. Be sure and remove the seeds! I cut the chicken breasts in half lengthwise because I prefer thin cutlets. It also makes it go a long way. I only use 1 bonesless chicken breast cut in half for 2 servings. Print Jalapeno Popper Chicken Servings 4 Ingredients 2 lbs boneless skinless, chicken breast (about 3-4 chicken breasts) 1/2 tsp garlic powder 8 oz cream cheese softened 1/2 pound jalapeño…

    Crispy Chicken Wings

When I originally thought of this simple recipe I baked the wings in the oven. Since then, the air fryer has come out, and I’ve switched to air frying them. You could still use the oven, but it’s faster air frying-only about 17-20 min or less in the air fryer. I shared my recipe with Just A Pinch, a recipe site, and here’s what they said about these crispy baked wings when they tested them ~ We loved these guilt-free baked chicken wings! They’re nice and crispy on the outside, but juicy on the inside. These wings aren’t too spicy, but pack a great punch of flavor. The added spices…

    Crunchy Walnut Chicken Salad

This is a concoction of food I had handy, and we needed something to eat for lunch. A pretty simple concept-nothing fancy here. Cooked chicken with some crunchy things thrown in, plus a side of chopped walnuts since the walnut is the only nut – and one of the few plant-based foods – that contains omega-3. Omega-3 is an essential fatty acid (meaning we need to obtain it from our diets). Among the many benefits, omega-3 plays an important role in cognitive function and bringing down inflammation in the body. It’s pretty fitting since the walnut is shaped like a little brain.  Served in a Joseph’s Pita Bread half with slices…
