    20-Minute Pizza Dough

    You’ve probably tried or at least heard of fathead pizza dough-it’s a melty mixture of mozzarella cheese, cream cheese, egg and almond or coconut flour. I have posted another recipe HERE, but I always like to test out recipes I’ve seen on social media too because you never know if there’s something out there better. I found this recipe on https://gimmedelicious.com and tried it today. It was a success-I think making crust with almond flour might be better because it absorbs liquid less.     Keto Chorizo Breakfast Hash

    Anything made in a cast iron skillet just tastes better, especially a hearty but still “KETO” breakfast like this. Instead of potatoes, I used cabbage and a few chopped onions for this hash, and the chorizo is such a great keto ingredient because it adds the fat you need, as well as the protein.     Keto Blueberry Crumble

    I was hungry this morning, but nothing sounded good. I had some fresh blueberries (about 2 1/2 cups) that I needed to use, but muffins or hot cereal topped with them didn’t ring my chimes. Then I thought of making blueberry crumble for breakfast just because I could. I figured, fresh fruit, a little keto crumble and a splash of heavy whipping cream to add in my fat for the meal. Bravo!     I’m not much on cauliflower, but for some reason I love it in this salad. Maybe because I cut the florets into tiny pieces, along with the other veggies. Feel free to add other veggies too like carrots, artichoke hearts, cucumber, etc. I love the combination of the bacon and the cheese with the creamy ranch dressing.     Quick & Easy Chicken Stir-Fry

    This is my easiest low-carb/keto recipe yet. It’s also very adaptable to what you have on hand. Last night I had some frozen broccoli,cauliflower,carrot in a steamer bag. I had a bag of frozen riced cauliflower that I got at Aldi for 1.79 a bag. I also had 3 chicken breasts, boneless and skinless.
