    Cheesy Zucchini & Riced Cauliflower

Whether you’re one of the millions of those Keto or Low-Carb people or not, this side dish is really good. It goes well with chicken, beef, pork – anything! Not a fan of cauliflower, this doesn’t taste like it at all, which is a good thing if you’re me. I kind of think that riced cauliflower is sort of like tofu-it takes on the flavors of what it is mixed with, which is also good. Give it a try-you’ll be glad you did. Easy One Skillet Chicken Alfredo LC/Keto

This is how most of my dinners go: Look in the fridge Look in the pantry Pick a protein Pick a veggie Start putting it together somehow, using what I have on hand It may not be the best way to prepare dinner, but it goes fast, USUALLY turns out edible, sometimes wonderful and solves the “what to eat for dinner” problem without reading a recipe. This was one of those dishes that I made last night-Chicken breasts. Cut into strips. hmmmm-Mexican, Italian, Southern? Then I spotted a spaghetti squash laying over there on the countertop. Wash, cut, scoop, season, bake. While that was cooking, I started by sauteing the…

    Quick & Easy Chicken Stir-Fry

This is my easiest low-carb/keto recipe yet. It’s also very adaptable to what you have on hand. Last night I had some frozen broccoli, cauliflower, carrot in a steamer bag. I had a bag of frozen riced cauliflower that I got at Aldi for 1.79 a bag. I also had 3 chicken breasts, boneless and skinless. I steamed the veggies in the microwave, stir-fried the chicken, cut into small strips, then added the riced cauliflower and then the veggies. I added soy sauce and voila! Protein is KING!

In the Low-Carb, Ketosis-Based world we live in, emphasis is on eating less carbohydrates, no sugar, and more fats. Protein plays a very key role in weight loss and metabolic health, and not many people realize this. I found it out just this morning. I was doing my annual work-related health biometric screening, and afterwards met with a P.A. who knew a lot about nutrition. I learned a few important things, and one is about protein and the way carbohydrates are broken down with the help of protein.    Carbohydrates, proteins, and fats are digested in the intestine, where they are broken down into their basic units: Carbohydrates into sugars.   Proteins into…

    It’s Pizza Night

Here ya go, one of the many pizza-making projects me and my Italian husband enjoy making together. This time, I used a new keto crust made with herbs and coconut flour, eggs and cheese-the new fathead dough for me. The sauce is always the same-Aldi Vodka Sauce because it has the fewest net carbs. The toppings, always Aldi-this time sausage, green pepper, kalamata olive, arthichoke and feta-stuffed huge green olives, sliced. topped with grated parm and mozzarella. First, let’s talk about the pizza dough. This one is nut-free, made with coconut flour. HERE is the link I used-Sugar-Free Mom’s recipe. The only change I made was to mix in my…

    Baked Zucchini Noodles

A great technique to cook spiralized zucchini in the oven without it getting mushy, which is not a good thing. Susan, aka “Grandma” to Brandon shared it with us last night at dinner, and it’s waaaaay better than soggy zoodles! 250 degrees. Spiralize the zucchini into fine noodles. Place on dry paper towels, enough to cover the baking sheet. Sprinkle with sea salt and bake 30 minutes-it sweats out the moisture, and the noodles are similar to al dente pasta-voila! The Avocado Quesadilla

The Avocado ~  160 calories, 2 grams of protein and 15 grams of healthy fats. Although it contains 9 grams of carbs, 7 of those are fiber, so there are only 2 “net” carbs, making this a low-carb friendly plant food. Avocados do not contain anycholesterol or sodium and are low in saturated fat. A simple and easy lunch when you’re tired of the same thing.  One low carb flour tortilla filled with a sliced avocado, salted. Folded over and grilled in butter with a little shredded cheese on the outside for crunchiness the last time you turn it over. Served with sour cream-slice into 3 wedges and enjoy your entire 8 net carbs! Drink with lots and lots of water-get…

    Pimento Cheese

Maybe it’s a Southern thing, but pimento cheese is a staple in the South. We all grew up on it-filling soft, white bread (sometimes crustless) with it. This is my own creation for a homemade spread. Use it to fill sandwiches or on celery. I put it on lowcarb wraps. You can also add fresh, minced jalapeno peppers to the mix-you won’t be sorry you did. Print Pimento Cheese Servings 8 Ingredients 1 c medium cheddar or longhorn cheese grated 3/4 c monterey jack cheese grated 1/2 c sharp cheddar cheese grated 2/3 c real mayonnaise not salad dressing-i use duke's 4 oz cream cheese room temperature 4 Tbsp diced…

    Mississippi Chicken

It first started with a roast, then I took the recipe and used it for chicken breasts. So simple and lots of flavor. It does sound a little weird, but trust me, use all the ingredients, and you won’t be sorry.  Print Mississippi Chicken Servings 6 Ingredients 6 boneless skinless chicken breasts 1 teaspoon seasoned salt 1 teaspoon black pepper 1 packet au jus gravy mix 1 packet ranch dressing mix 1 stick 1/2 cup salted butter 6-8 whole peperoncini peppers Instructions Add chicken breasts to the bottom of a slow cooker. Individual Pita Pizzas

I love Joseph’s Pita Bread, and I really love to make individual pizzas with them. It’s so easy, and use what you have on hand. Today I made one with chopped green pepper, pepperoni and cheese with just a hint of tomato sauce with Italian seasoning. Perfectly toasted in the oven at 400 degrees for only about 10 minutes. Be sure and keep an eye on it because it doesn’t take long to cook-the cheese will be bubbly, and when you cut it into little wedges, it will turn a pita into a pizza. No recipe needed. Jalapeno Popper Chicken

Photo & Recipe Courtesy of Easy Family Recipes, found on Pinterest. I have made this recipe many times because I love the taste of the fresh jalapeno peppers, whether I chop them or cut them into strips like in the photo. Be sure and remove the seeds! I cut the chicken breasts in half lengthwise because I prefer thin cutlets. It also makes it go a long way. I only use 1 bonesless chicken breast cut in half for 2 servings. Print Jalapeno Popper Chicken Servings 4 Ingredients 2 lbs boneless skinless, chicken breast (about 3-4 chicken breasts) 1/2 tsp garlic powder 8 oz cream cheese softened 1/2 pound jalapeño…

A schnitzel is meat, usually thinned by pounding with a meat tenderizer, that is fried in some kind of oil or fat. The term is most commonly used to refer to meats coated with flour, beaten eggs and bread crumbs, and then fried. To me, there’s nothing like a thin, crispy pork schnitzel, and I’ve found a way to make a low carb version that is just as delicious as the ones I’ve made in traditional breadcrumbs. PORK RINDS! 0 carbs I use this hand little hand-pulled food chopper that I ordered from QVC.   What I did was chop them fine, almost making a “dust.” A dish of 3 eggs,…

    Fish Fry

When my husband came home with a cooler full of iced-down freshly-caught crappie, and we don’t eat many carbs, I knew I had to think quickly! Pork Rinds! I had seen it done, and even though he questioned it, I tried it anyway. Who wants to fall off the LC wagon for fish?! Beaten eggs, finely-processed pork rinds, salt & pepper and peanut oil. It was very unbelievable, crunchy, filling and a great experiment that we will use over and over again. I wanted tartar sauce, so I mixed together mayonnaise (full fat), dill pickle relish (a log of it!) and a bit of pepper. I also added a little…

    Cinnamon Toast Crunch Cereal

There are really only 2 things I’ve missed while living the low carb lifestyle – toast and cereal. Those were my 2 mainstays of breakfast and even sometimes dinner. I’ve been able to substitute everything else, even ice cream, but toast and cereal aren’t easy to re-create. I buy Joseph’s Lavash bread-It’s Flax, Oat Bran & Whole Wheat Middle Eastern Bread, and the large sheets of it have only 6 net carbs. I use half, so 3 net carbs.  Here’s what I did-I sprayed a cookie sheet with buttery non-stick spray. Then I melted 2 Tablespoons butter. I sifted together 1 T. cinnamon and 2-3 T. Swerve granulated sugar substitute…

    Italian Sausage with Squash Noodles

It all started with a zucchini spiralizer that I ordered from, you guessed it, Amazon. Because if I can’t get it on Amazon, then I can live without it. Period. Below is my grandson giving it a workout. I chose one that was small, easy to clean and had great reviews. After my air fryer, no more huge appliances will be ordered for me! I cooked some Johnsonville Mild Italian Sausage links in a pan with olive oil, then I sliced them up and finished cooking them. In a separate pan I melted butter (I use Kerrygold), added some minced garlic and Italian seasoning. Threw those zoodles (I used yellow…
