    Bubble & Squeak

You know the sound of bubbling and squeaking? Well, this cabbage and potatoes cooking in a skillet makes THAT noise. Hence the name. “Bubble and squeak is a traditional British breakfast made from boiled potatoes and cabbage. In modern times it is a dish made with the shallow-fried leftover vegetables from a roast dinner. … The dish is so named because the cabbage makes bubbling andsqueaking sounds during the cooking process.” Somewhat the same, but this is my personal version because, well, it just tastes great! It’s also great as a side if you just cook the vegetables in some oil or in bacon grease if you want to add bacon to…

German Cabbage Soup for the Soul

By Paula Todora When we lived in Maple Valley, WA we visited a wonderful and authentic German Restaurant often. The Cabbage soup was our favorite. I asked the cook several times what her secret was (a German lady, of course). She would never devulge her secret, of course. I would go home and attempt to get the flavors just right, with no success. Then one day, she told me the secret was in the pork broth. That’s when I changed my recipe up, and here it is-tastes similar to hers without actually having her family recipe. We love it! Schnitzel

A schnitzel is meat, usually thinned by pounding with a meat tenderizer, that is fried in some kind of oil or fat. The term is most commonly used to refer to meats coated with flour, beaten eggs and bread crumbs, and then fried. To me, there’s nothing like a thin, crispy pork schnitzel, and I’ve found a way to make a low carb version that is just as delicious as the ones I’ve made in traditional breadcrumbs. PORK RINDS! 0 carbs I use this hand little hand-pulled food chopper that I ordered from QVC.   What I did was chop them fine, almost making a “dust.” A dish of 3 eggs,…

    Sweet Pineapple Pulled Pork

I love pineapple in so many things I thought I’d try to add it to my slow cooker shredded pork. I experimented with the recipe, and this is what I came up with. It’s a little bit spicy with the red pepper flakes but not too much. Mild enough for kiddos, but you can always leave it out. I believe in seasoning as you go in layers, so even though not written into the recipe, you can always add a little more garlic or spices as you go along, including soy sauce. It came out perfect the first time, and the Hawaiian sweet buns were so good to serve this…

    Slow Cooker Pulled Pork

A brief history of North Carolina pulled–porkbarbecue. A brief history of North Carolina pulled–pork barbecue. … Both the name and method of cooking found their way to North America, where George Washington noted in his diary of 1769 that he “went up to Alexandria to a “barbicue.” Not counting the seasonings, there are only 3 amazing ingredients in this “off the cuff” recipe I made one day. Now it’s the only way I cook pulled pork. You can use any kind of beer or ale and any brand of barbecue sauce. I use Shiner Bock beer and Sweet Baby Ray’s regular barbecue sauce.
