    I’m one of those annoying “Pumpkin Everything” people that you love to hate. That is, unless you are one too! It doesn’t have to be fall for me to crave pumpkin pie, and in fact, it’s a real superfood. Full of fiber, rich in beta-carotene, potassium, and vitamin C.  Avoid the pumpkin pie filling in a can, but use the canned pure pumpkin or fresh pumpkin.
