The Other Side

Not a fan. At all.

Cauliflower is not my friend-that’s what makes low carb eating difficult for me. That and the hatred of eggs. No offense, Cauli Flower and Eh ggs.

When I discovered potatoes dumped me too, and we had been in love for so many years, I had to reach out, join an online dating group and find someone new. That’s when I met this dish, and it’s as close as I can get to my true love without cheating on him. I call him “The OTHER Side.”

The OTHER Side-Cheesy Cauliflower Bake

Ingredients

  • 2 pkgs 12 ounce each frozen cauliflower florets or 2 small heads fresh cauliflower
  • 1/2-1 t. salt depending on taste
  • 1/2 t. black pepper
  • 1/4 t. creole or cajun seasoning
  • 1/2 t. onion powder
  • 3 Tbsp butter
  • 8 oz cream cheese cubed
  • 1 1/2 c shredded cheddar or cojack cheese
  • 1 tsp dried parsley
  • dash paprika

Instructions

  1. Preheat the oven to 350 degrees. Spray a 2 quart baking dish with nonstick cooking spray.
  2. Cook the frozen cauliflower in boiling salted water 10 minutes, drain well. Mash with a potato masher gently for just a few seconds, leaving some chunks of cauliflower.
  3. Add the salt, pepper, Cajun seasoning, onion powder, butter, cream cheese, parsley and 1 cup of the shredded cheese; mix well. Spoon into the prepared baking dish. Sprinkle with paprika and then the remaining 1/2 cup cheese.
  4. Bake 20-25 minutes, or until bubbly and light brown on top.
